BBQ Short Rib

Melt in the mouth

This is a slow cooked beef rib, cooked on a bed of vegetables and served on top of mash potatoes with spring onion aka “champ” in northern Britain.

Preparation

It’s a very simple recipe that just takes a small amount of time.. then a hell of alot of time. (2-3 hrs).

The meat – To prepare the beef it’s very simple. Let it come up to room temperature and marinade it in a BBQ mix of your choice. For this I rubbed mustard on the beef then covered the yellow areas with a Hot BBQ seasoning.

The vegetables – I sliced them disc shaped and coated in a touch of olive oil with some of the BBQ seasonings Himalayan pink salt and black pepper.

  • 1 Large Onion
  • 1-2 Peppers (Green or Red)
  • 1 Chillie (Green)
  • 3 Small tomatoes that needed used up.
  • Few Garlic cloves (habit)
  • These ingredients can be changed its up too you. Experiments are exciting and no one needs to know if they don’t work out!. I would have used potatoes if I had any.

Let the meat rest and marinade for as long as you can. I’ve done a his recipe before on 35 minutes marinading time. This occasion I got 4 hours worth. Place the vegetables spear across the pan. Add the meat on top. You can salt and pepper the meat , I did in this case. But I also added some BBQ sauces to the meat in nice sploshes. This case I used Sweet Baby Rays. Cover the pan in foil and put it at the top of a preheated oven at Gas mark 4 / 180C/350F for at least 2 hours 20. Tho I went for 3!.

After this time remove from the oven and mix some of the meat and vegetables juice and mix with a BBQ sauce. Or remove the vegetables and keep them warm. Optional steps would be to baste the meat.

The last step is to get some of the BBQ Sauce and put it over the meat ribs. Either the Juice + BBQ sauce mixture or for a sweeter / tangier experience then just use BBQ sauce of choice. I recommend Sweet Baby Rays. The meat should be supper soft and can fall apart do be careful!. We want some colour on the meat and melt the sauce. In this case I used the grill / broiler with gas from the top. This should only take 5 or so minutes. I added BBQ sauce to a pan , carefully moved the rib to the pan when the sauce was bubbling and then added more sauce on top then grilled it 8 minutes for me on my appliance.

I served mine on mashed potatoes with spring onion through it.
